Too too funny guys!
Here is my first recipe. Call this Andrea's Secret Meatloaf. I pulled this recipe up the other day when I was looking for crock pot recipes. My hubby loves meatloaf but is a bit picky on the texture. He hates it 'mushy'. I have never tried making it in the crock pot so this immediately caught my eye. Now, for the SECRET. My hubby also has a fondness for chili sauce, seems we always have a few bottles around. He also has a fondness for opening more than one bottle at a time :) As I was mixing all the ingredients together I grabbed a couple of half empty bottles out of the fridge. I didn't pay attention to the fact that one was missing the label. I mean, they looked the same. So, as I was dumping in the first five tablespoons from this jar I glanced at the little label on the neck and spotted the word horseradish. My mind began to digest the fact that to my knowledge there is no horseradish in chili sauce. With a great amount of dread I tasted the sauce ( in the jar of course) which was now empty. No not chili sauce- COCKTAIL SAUCE! I blew out a big breath and decided that what they didn't know surely wouldn't kill them (or so I hoped). To make this short, it was a HUGE HIT! My husband LOVED it. He said it was the best meatloaf I had made so far, and this was before I told him it had cocktail sauce in it. So here it is for all of those willing to try it!

2 pounds ground beef (preferably lean)
2 fork beaten eggs
2 T. cocktail sauce & 1 T. chili sauce (or 3T. chili sauce)
3 Tablespoons Onion soup mix (or one packet)
3 Tablespoons beef/ steak seasoning
Ketchup or chili sauce to cover the top.
Mix all the ingredients and mush into crock pot. Spread additional ketchup or chili sauce on top. Cook for 6-8 hours on low or 3-4 hours on high.
You can double this if you have a 6 qt pot, I did (that's how it wound up with 5 T. cocktail sauce and one chili sauce). You will also notice it has no bread crumbs or anything. This seems to give it a firmer texture which my hubby really liked. LET ME KNOW WHAT YOU THINK!!
